Vegan Strawberries and Cream Popsicles

This plant-based, refreshing recipe is adapted from Recipe Runner.

The perfect cold treat for a hot summer day. A layer of fresh strawberry-coconut purée is swirled tasty toasted coconut for a delicious dairy-free popsicle!


  • 12 ounces strawberries
  • lemon juice squeeze
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 3 ml (60mg) Plant People Mind+Body Drops
  • Pinch salt
  • 1 can coconut milk
  • 1/4 C toasted coconut


  1. In a high-speed blender, combine the all of ingredients, except for the toasted coconut, and purée until smooth.
  2. Fold in toasted coconut
  3. Pour into popsicle molds and freeze until solid.
  4. Enjoy!
